Equipment
- It is in your interest to maintain and service all equipment regularly
- Fridges and Freezers require higher levels of maintenance and diligence. Do not overload or cover the fan areas and regularly service and clean dust away from the air intake diffuser
- Regularly defrost and clean freezers
- Regularly clean fridges
- Landlords, insurers and warranties require records of regular maintenance and a service history
- Drain and Washing Sinks require weekly flushing with boiling water and soda crystals (wear protective goggles and gloves for this)
Stock Management
- Always check fresh food for quality upon arrival
- Do not overstock with perishable goods but allow at least 1 day of stock beyond next stock delivery for unforeseen circumstances
- ALL STOCK MUST BE ROTATED INCLUDING DRY GOODS AND PACKAGING
- Order according to what needs replacing
- Ensure you do not run out of stock as you will lose consistency and disappoint customers by short-ordering with different produce
- Maintain regular suppliers as the customer has acquired that taste
- Bulk buying can be effective with dry goods, oils and cleaning materials, NOT perishables
Food Preparation and Production
- Prepare food fresh every day
- Maintain levels of food preparation as per environmental health agency legislations and requirements
- PLEASE SEE YOUR ENVIRONMENTAL HEALTH MANUAL FOR THE STORAGE OF PREPARED FOODS
- Always leave cooling cooked foods at work-top levels so it is visible
- Always completely cover food which is cooling
- Never have chemicals (cleaning products etc) near food preparation areas
Selling Your Food
- Optimising sales- Quickly understand your customer’s tastes and requirements rather than forcing product they may not be accustomed to, you can introduce new lines gradually
- Try to avoid offers which suggest a struggling business and depreciating quality
- Ensure your shop sales area is always well staffed with the appropriate employees.
- Consistent food and service quality offers you maximum customer retention and sales
- Delivery option is available but food quality may suffer
- Packaging can offer optimum and consistent portion control
