Menu Options

There are three types of menu: Specialist, Dual and Multi.

Specialist Menu

This is to include pure fish and chip shops, pure kebab/burger shops, pure Chinese takeaway and pure pizza etc.

​Suitable locations for Specialist Menu:

  • City/town centre
  • Housing estates
  • Shopping parade
  • Retail parks

Advantages of a Specialist Menu Shop are:

  • Lower stock
  • Less staff
  • Specialist service
  • Less equipment required
  • Concentration on a good product to establish a reputation

Disadvantages of a Specialist Menu Shop are:

  • You are reliant on customers who want your specific product at the same time allowing customers to seek their choice of other food tastes at other outlets.

Dual Menu

This is to include pure Fish and Chip shops / Chinese, Fish and Chips / Kebab / Burger shops / Burger Shops and Kebab / Burgers and Pizzas

Suitable locations for Dual Menu:

  • Housing estates
  • Shopping parade

Advantages of a Dual Menu Shop are:

  • You are giving the customer more options to choose from
  • You are attracting customers with a wide variety of taste
  • Scope for longer hours i.e. people ordering other than fish and chips eat later in the evening.

Disadvantages of a Dual Menu Shop are:

  • More stock is required
  • Specialist staff are required for the alternative option who normally require more than the basic pay
  • More equipment including fridge/freezers and specialist cooking equipment
  • This type of alternative menu shop usually requires longer opening/working hours due to the nature and customer requirements i.e. later eating.
  • The more staff you have to employ the harder it is to replace all cover in the case of sickness, holiday and resignations.

Multi Menu

This is to include three or four of the food types listed above served in the one premises.   

Suitable locations for Multi Menu:

  • Housing estates
  • Shopping parade
  • Retail park
  • City Centre

Advantages of a Multi Menu Shop:

  • You are giving the customer more options to choose from

Disadvantages of a Multi Menu Shop:

  • More stock is required
  • Specialist staff are required for the alternative option who normally require more than the basic pay
  • These multi menu shops have the same disadvantages as a duel menu shop with regards to staff and stock control
  • The main disadvantage is you are basically running 3/4 businesses from the one premises, under one person’s responsibility
